VINIFICATION
The harvested grapes are immediately passed through the stemmer-crusher and conveyed into stainless steel tanks where they are subjected to cold maceration (cryo-maceration) for 8 to 12 hours. The still cold product is gently pressed by a pneumatic press and immediately undergoes flotation with nitrogen. Thereafter, fermentation is carried out at a controlled temperature with a selected and certified yeast. After the first transfer, batonnage is carried out to obtain softness from the yeast lysates (fine lees). In the following months, various decantation, purification and filtration methods are carried out until the product is ready to be bottled.
During bottling, the wine also undergoes a last 0.45 micron filter to ensure that no micro-organisms are present, which could create problems in preserving the bottles.
ORGANOLEPTIC CHARACTERISTICS
Strong straw yellow colour, aromas of wild field flowers and grapefruit, well-structured and persistent on the palate. A very round and well balanced taste.
PAIRINGS
Excellent with tasty meat and fish dishes, seasoned cheese and grilled red meat.
