VINIFICATION
The harvested grapes are immediately passed through the stemmer-crusher and conveyed into stainless steel tanks where they undergo maceration which varies depending on the vintage, about 6-8 days fermenting at a controlled temperature and with programmed pumping every 3-6 hours. This is followed by soft grinding and pressing and then the fermentation is complete.
Subsequently there is decantation, purification and filtration until the product is ready for bottling.
ORGANOLEPTIC CHARACTERISTICS
Ruby red colour, aroma of red berries and spices, harmonious and well-structured on the palate. Dry and very persistent aftertaste.
PAIRINGS
Excellent with tasty meat and fish dishes, seasoned cheese, grilled red meat and soups.
